Hello everyone! It`s December again and the smell of cinnamon, walnuts, and clementines is all across the house! Today, we are going to make a fluffy Spiced Persimmon & Clementine Pudding. You`re gonna love it from the first spoon!

Our pudding has a secret ingredient and this is the Homemade Spiced Clementine Jelly. It`s so easy to prepare and you can keep it in the storage for a long time either conserved or frozen. Here is how to make it:

Ingredients

– 5 Clementines
– 250г. Zahira Jam Sugar
– 200 ml Water
– 1 tbsp Ground Cinnamon
– 1 Vanillin
– 1/4 Nutmeg (grated)
– The zest of 1/2 lemon

Directions

1. Peel the clementines and split into wedges.
2. In a small pot, add the water followed by the cinnamon, nutmeg, vanillin, and lemon zest. In the end, add the clementine wedges and stir well. Simmer the clementine in the spices for 20 minutes.
3. Add the Jam Sugar to the clementines and simmer for another 5 minutes.
4. Let it cool down for about 10 minutes, then blend into a puree. Strain the puree to get a fine and smooth substance. Spread into small jars (30-50ml) or pour it into large ice trays and deep freeze.

Depending on the size of the jars and ice tray, you will get between 10 and 20 portions. One portion is more than enough to give an amazing spiced & zesty flavor to your festive desserts. You could add it to cakes, jams, cookies, puddings, or even to spice up a pot of tea.

Winter Spiced Persimmon & Clementine Pudding

Ingredients

– 4 Persimmons
– 1 Portion of the Homemade Spiced Clementine Jelly (find the recipe above)
– 200 ml Double cream
– 200 g Sour cream
– A pinch of sinnamon
– 50 ml Honey
– 1 Rum Flavored Sugar

Winter Spiced Persimmon & Clementine Pudding

Directions

1. Peel the persimmons and soft boil them in water with a pinch of cinnamon. Then strain them well and blend into a fine puree.
2. In a large mixing bowl, beat the double cream. Add to it the clementine jelly, honey, rum sugar, and blended persimmons. Mix until homogeneous. In the end, add the sour cream and mix again.
3. Spread into portions and decorate as desired. Depending on the size of the serving bowls, you will get between 4 and 8 portions.
4. Let it set in the fridge for a couple of hours.
