Sweet Potato & Chickpea Russian Salad – The Healthier Option

The Russian Salad is a well known ever-green classic recipe. It`s usually made of boiled potatoes and carrots, pork ham, pickles, and green peas, all diced and mixed with mayonnaise.

Today we are going to show you our upgraded, low-fat option of the traditional Russian Salad. We replaced the regular yellow potatoes with sweet potatoes, added some boiled chickpeas to enrich the dish, and mixed them with light low-fat mayonnaise. Instead of pork ham, we added cooked chicken breast fillet.

Prepared this way, the Russian Salad could be an excellent part of a balanced diet plan. We hope you`ll like it too! 🙂

Sweet Potato & Chickpea Russian Salad


  • 200 g Cooked chicken breast
  • 400 g Sweet potatoes
  • 200 g Green peas (or 1 tin)
  • 4 Carrots
  • 100 g Boiled chickpeas
  • 250 g Low-fat mayonnaise – we used Heinz Light
  • Cracked black pepper


1. Boil the carrots, potatoes, chickpeas, and peas in lightly salted water.

Here it is a little tip

To avoid your salad getting mashy, first dice the sweet potatoes and carrots into small cubes, then boil them in salty water for 10 minutes only. Straight after that strain them and top up with ice-cold water until the vegetables entirely cool down. This will save you time while keeping your cubes in perfect shape.

2. Dice the cooked chicken fillet into small cubes.
3. In a large bowl, add the boiled vegetables, chicken fillet, and mayonnaise and mix well.
4. Serve with cracked black pepper.
