We all have these lazy days when the last thing we want is to spend the day/evening in the kitchen. In days like this, we adore these quick and easy hassle-free recipes. The recipe for today is a real veggie protein boost. Low in fat, high in protein, fibre, and antioxidants. The thing we most like in it is the preparation time – only 30 minutes! Sometimes the dreams become true. 🙂
Smoked Zucchini & Split Red Lentil Salad

Smoked Zucchini & Split Red Lentil Salad
Ingredients
- 250 g Split red lentils
- 3 Zucchini
- 1 bunch Spring onions
- 3 tbsp Olive oil
- 1 tbsp Smoked paprika
- Salt
- Pepper
- A handful of fresh parsley
- A few drops of Balsamico
- 1 tbsp Grated Parmesan (optional)***
Directions
- Boil the lentils in water for 10 minutes, then strain and let them cool down.
- Chop the spring onions.
- Peel the zucchini and dice them into small cubes.
- In a large pan, braise the onion in the olive oil for a couple of minutes.
- Add the zucchini cubes to the onions. Cook on medium heat until the zucchini soften, then add the smoked paprika, some salt, and pepper.
- In 5 minutes, remove the zucchini from the heat and let them cool down a bit.
- In a large bowl, add the boiled lentils, followed by the smoked zucchini, and finely chopped parsley. Season with a few drops of Balsamico and stir well.
- Optionally sprinkle with grated Parmesan.
Some tips from us:
– If you don`t have split lentils at home, you could use regular ones. In this case, give some more time to get cooked properly.
– *** Parmesan is not suitable for vegans/vegetarians!
