Mediterranean Chickpea & Sweet Potato Dippers

Chickpeas are a great source of fiber, vitamins, and minerals. They are high in protein which makes them an excellent replacement of the meat for vegetarians and vegans. The Mediterranean Chickpea & Sweet Potato Dippers are also gluten and dairy-free, and significantly low in fat. Perfect party bites, or light appetizers. Hope you`ll enjoy! 🙂

Mediterranean Chickpea & Sweet Potato Dippers

Aromatic gluten-free chickpea & sweet potato dippers lightly seasoned with Mediterranean spices.

Ingredients

  • 1 can Chickpeas (or 1 cup boiled chickpeas)
  • 8 Cherry peppers
  • 10 Green olives (pitted)
  • 10 Black olives (pitted)
  • 1 tbsp Olive oil
  • 2 Small sweet potatoes (or 1 large)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Italian mixed herbs
  • 1/2 tsp Garlic powder
  • 1 tbsp Crispy onions
  • For the crust:

  • 2 tbsp Chickpea Flour
  • 1/2 tsp Garlic powder
  • 1 tsp Dry parsley
  • Salt
  • Pepper

Directions

  1. Wash and drain the chickpeas.
  2. Peel the sweet potatoes and boil them in salty water for 10-15 minutes.
  3. In a blender, add the chickpeas, boiled sweet potatoes, and cherry peppers, and the olive oil.
  4. Blend until homogeneous.
  5. Add the salt, pepper, garlic powder, Italian spices, and the crispy onions, and blend again to mix all the ingredients.
  6. Shape small balls.
  7. Place an olive in the core of each ball and cover with the batter.
  8. Mix the chickpea flour with the garlic, parsley, salt, and pepper.
  9. Roll each ball in the dry mix.
  10. Bake for 30 minutes, at 220°C.
  11. Serve with a dip of your choice.

Some tips from me:

– We always try to give you an option for a healthy recipe. However, you could prepare the dippers deep fried too. In this case, follow the steps 1 to 8. Then deep each ball in egg, followed by the dry mix. Repeat two times. Freeze the dippers for 30 minutes, then deep fry for approx 10 minutes, or until golden. Keep in mind that this alternative is NOT vegan!
