2-Way Feta & Leek Christmas Party Snacks

Christmas cookies and happy hearts, this is how the holiday starts!

There is nothing more exciting than the Christmas baking! The smell of walnuts, cinnamon, and pastry is so delightful. But since we are surrounded by sweets everywhere, today we`re​ going to make savory Christmas treats. I hope you`ll enjoy! <3

Feta & Leek Christmas Biscuits

Crispy feta & leek savoury Christmas biscuits with Marmite cream cheese.


Ingredients

  • 2 Shortcrust pastry sheets
  • 2 Leeks
  • 100 g Feta cheese
  • 2 Eggs
  • 50 ml Milk
  • 20 g Butter
  • 1/2 tsp Salt
  • Black pepper
  • 2 tbsp Crispy onions
  • For the dip:

  • 100 g Cream cheese
  • 1/2 tsp Marmite
  • 1 tsp Crispy onions

Directions

  1. Slice the leeks into rings.
  2. In a medium pan, melt the butter.
  3. Add the leeks, followed by the salt, pepper, and the milk.
  4. Cook over medium heat for 5 minutes, then add the eggs and the feta cheese.
  5. Constantly stir until the eggs are fully cooked and no liquid remains.
  6. Let cool down.
  7. Open one of the pastry sheets.
  8. Spread the feta & leek mix over.
  9. Cover with the second pastry sheet.
  10. Gently roll out with a rolling pin to help the layers fix together.
  11. Cut into Christmas shapes, and place them on a baking sheet.

  13. Eggwash with egg yolk, then sprinkle with crispy onions.

  15. Bake for 25 minutes, at 180°C.
  16. Serve with a Marmite cream cheese or sour cream.

    *For the Marmite cream cheese, mix the cream cheese with the Marmite, then sprinkle with crispy onions before serving.

Fluffy feta & leek leftover waffles with Marmite cream cheese.

Directions

  1. Knead the leftover dough pieces.

  3. Shape small discs (approximately 5 cm).

  5. Bake them in a waffle maker for 7 minutes each.

  7. Serve with a Marmite cream cheese or sour cream.

Some tips from us:
– These delightful savory snacks are good not only at Christmas. If you don`t have any pastry cutters at home, you could cut off squares or rectangles using a knife.
– If you fancy only the waffles, make sure you finely chop the filled dough before kneading. This will help it knead homogenously.
