Fiery Meatballs Tagliatelle

Creamy broccoli and blue cheese tagliatelle with fiery meatballs.


    For the meatballs:
  • 500 g Ground beef
  • 2 Eggs
  • 2 Red chili peppers
  • 1 Onion
  • 1 tsp Paprika
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 1/4 tsp Ground cumin
  • For the sauce:

  • 6-7 Broccoli florets
  • 100 g Blue cheese – We`ve used grated Roquefort cheese, however, you can replace it with soft blue cheese chunks.
  • 1 Onion
  • 2 Garlic cloves
  • 1 tbsp Olive oil
  • 250 g Cream
  • Salt
  • Pepper


    For the meatballs:
  • Finely chop the onion and the chili peppers.
  • In a medium bowl, add all the ingredients.
  • Mix until homogeneous.
  • Bring to the boil 200 ml of water, then reduce to the simmer.
  • Shape medium meatballs.
  • Start adding the meatballs to the water. Gently turn then, to make sure they are perfectly cooked.
  • Once the meatballs are fully cooked, pick them up from the water. Leave them aside while cooking the sauce.
  • The creamy sauce is fat enough and we don`t want to make the dish too heavy. That`s why we suggest the water bath cooking method for the meatballs. Doing this, you`ll get rid of the unneeded fat, and will keep the meatballs in perfect shape.

    For the sauce:

  • Finely chop the onions.
  • Slice the broccoli florets.
  • Simmer the onion and garlic in the olive oil for a couple of minutes.
  • Add the broccoli to the onions.
  • Season with salt and pepper.
  • Add the cream, followed by the blue cheese.
  • Simmer until the blue cheese melts.
  • Final steps:

  • When the blue cheese melts, add the meatballs in the sauce for a minute, ensure they all are covered by the sauce, then pick them up.
  • Add the tagliatelle, previously cooked for 8* minutes, to the sauce.
  • Cook together for 5 to 10 minutes.
  • Serve the pasta with a skewer of the fiery meatballs, topped with chopped parsley and fresh red chilis.

Some tips from us:

– *We cook the pasta for only 8 minutes because it keeps cooking in the sauce. If you fully cook the pasta in prior, it will get mushy when you mix it with the sauce.
– Be careful with the chilis, they are really FIERY! So if you are not a fan of spicy food, replace them with finely chopped bell pepper.
