Coconut & Chia Protein Bites with Gingerbread Banoffee Sauce

The combination of coconut flour and chia seeds makes these cookies a real source of nutrition. They are gluten-free, very high in protein and fibre, and low in carbohydrates. So if you want to lose some weight before the upcoming holidays, these cookies are a perfect treat for you. 🙂 However, the real temptation is in the sauce, and must be tried at least once! I know, it`s not really healthy but no harm from a dip or two, is it? 🙂 This sauce is a festive twist of the very classic banoffee. It`s made with toffee, ripe banana, and gingerbread syrup. Gluten Free Protein Cookies & Gingerbread Banoffee Sauce

Gluten-free coconut & chia cookies with gingerbread banoffee sauce.

Ingredients

    For the cookies:
  • 2 Eggs
  • 300 g Low-fat yogurt
  • 150 ml Milk (divided)
  • 1/2 cup Coconut Flour
  • 1 tbsp Chia seeds
  • 1/4 tsp Baking powder
  • 5 ml Vanilla extract
  • 50 ml Melted coconut oil
  • 50 ml Pure honey
  • For the sauce:

  • 400 g Toffee – I`ve used a ready one, but if you prefer, or don`t find a ready one in the shop, use sweetened condensed milk. Simmer at low heat until you get a nice caramel color.
  • 1 Ripe banana
  • 100 ml Milk
  • 25 ml Gingerbread syrup – I`ve used Monin Gingerbread

Directions

    For the cookies:
  1. Mix the chia seeds with 100 ml of the milk, and the vanilla, stir well, then leave in the fridge for at least three hours (best leave overnight).
  2. In a large bowl, mix the yogurt with the baking powder.
  3. Add the eggs, followed by the soaked chia seeds, honey, coconut oil, the remain 50 ml of milk, and finish with the coconut flour.
  4. Shape cookies.
  5. Sprinkle each cookie with chia seeds.
  6. Bake for 30 minutes, at 200°C.

    For the sauce:

  8. Chop the banana.
  9. Heat the toffee.
  10. Add 25 ml of gingerbread syrup, followed by the milk, and the banana.
  11. Simmer for 5 minutes at low heat.

Some tips from us:

– Optionally, use 1/4 cup of coconut flour and 1/4 cup desiccated coconut. This will make your cookies more crumbly.
– The gingerbread banoffee sauce is perfect on pancakes too. Give it a try.
