Gluten-Free Red Lentil Penne With Creamy Pesto Sauce

For pasta lovers, the lentil pasta is a real jackpot. And believe or not, it has the same amazing taste as regular pasta, just a way healthier! Gluten-Free Red Lentil Penne With Creamy Pesto Sauce

Gluten-free red lentil pasta, with turkey & bacon creamy pesto sauce.

Ingredients

  • 125 g Red lentils penne
  • 150 g Turkey breast
  • 5 Bacon Rashers
  • 1 Onion
  • 1 Garlic clove
  • 100 g grated Emmental (divided)
  • 200 ml Cream ( we have used low-fat, lactose-free cream)
  • 1 tbsp Grated Parmesan
  • 1/4 tsp Rosemary
  • 1/4 tsp Salt
  • 1 tbsp Green Pesto
  • 1 tbsp Olive oil
  • Black pepper

    Directions

    1. Finely chop the onion and garlic and braise them in the olive oil for approximately 2 minutes.
    2. Chop the turkey breast and the bacon, then add them to the onions.
    3. Add the pesto, rosemary, salt, and pepper, and stir well. Cook for 5 to 10 minutes (until the meat is fully cooked).
    4. Pour the cream over the meat and onions. Simmer together for 5 minutes, then add the Parmesan and stir well.
    5. Finally add the red lentils penne, previously cooked for 10 minutes in lightly salted water.
    6. Optionally add a part of the grated Emmental to the sauce. ( I always do that. Makes the pasta cheesier.)
    7. Serve with grated Emmental.

    Some tips from us:

    – As you already guessed, this is NOT a vegetarian recipe. However, could be easily transform into one. You can simply exclude, the turkey and bacon, and enjoy the cheesy creamy pesto penne. Or you can replace them with fresh broccoli. Add 5-6 broccoli florets to the onions, and sauté for 3-5 minutes before you add the cream. Follow the rest of the steps as above.
    – We already talked about the benefits of lentil pasta, however the creamy sauce is a way far from healthy. If you`d like a super healthy protein boost meal here is what you need to do. Forget about the cream! Instead, toss the pasta with the meat and onions for a minute, then add 2 egg yolks and a bit (50ml) of the pasta water. Cook at very low heat, while stirring gently, until you get a nice and creamy carbonara. Et voilà!
