    For the cheese mix:

  • 200 g Cream cheese (I`ve used Philadelphia)
  • 5 tbsp Powdered sugar
  • 5 ml Vanilla essence

  • 50 ml Condensed milk
  • 6 tbsp Desiccated coconut (divided)

  • 150 g Bourbon biscuits
  • 65 g Butter
  • 20 g Ground Almonds
  • Directions

    1. Prepare the biscuit dough.
    2. – Crush the biscuits. – If you use whole almonds, grind them, then add them to the biscuits. – Add the butter and mix until homogeneous. – Place in the fridge while you are making the cheese mix.
    3. Prepare the coconut cheese mix.
    4. – Mix the almond and condensed milk together. – Warm them up, then add 1 tbsp desiccated coconut and the vanilla extract and stir well. – In a medium bowl, mix the cream cheese, with the sugar and the coconut mix, until you get a homogeneous texture. – Place in the fridge for about 10 minutes to chill.
    5. Shape walnut-sized balls out of the biscuit dough.

    Some tips from us:

    – If you want to save time and effort, you can make coconut and almond cheesecake pots instead. Simply spread a biscuit ball at the bottom of each pot, then cover with coconut & cheese mix. Depending of the size of the pots you have, you can make 6 to 10 servings.

    – If you choose to make the pots, you can improvise with the garnish. I would suggest some dried fruits and coconut flakes, however, you are free to garnish as desired.
    – This recipe is suitable for kids too. It only requires a little supervision, during step one.
